The idyllic Cabo weather combined with the sapphire blue Palmilla Bay provided an enticing backdrop for Homeowners and guests from across the globe returned to the Del Mar communities of Villas Del Mar and Espiritu within Palmilla. In celebration of Del Mar Development’s 23rd season, Del Mar Development partnered with GE Monogram to welcome Homeowners, guests and friends in true fiesta-style for our annual welcome back cocktail.
Del Mar welcomed returning guest chef, Darren Walsh, of the Lula Bistro in Guadalajara who brought with him delectable “Margarita Macaroons” created by award-winning pastry chef, Fernanda Covarrubias of Postreria – Guadalajara.
The event occurred Del Mar Development’s model home, Villas at La Montaña 702, listed by Del Mar Real Estate. This two-story residences features more than 5,700 square feet and offers stunning views of the Sea of Cortez.

Chef Darren Walsh, of the Lula Bistro, began his education in France, where he worked in several Michelin starred restaurants. He worked in the kitchens of Les Saveurs, from Marco Pierre White (1 Michelin Star); Pied à Terre, from Tom Aikens and Richard Neat (2 Micheline Stars); La Tante Claire, from Pierre Koffman (3 Michelin Stars); City Rhodes, from Gary Rhodes (2 Michelin Stars); L’Aubergine, from Gordon Ramsay (2 Micheline Stars) and Daniel’s from Daniel Boulud in NYC (3 Michelin Stars), and others.
At the age of 27, Darren Walsh opened Papillon, his first restaurant, in New York City’s Village, where he conquered the most demanding critics of the gastronomic domain from the “Big Apple,” including William Grimes. In 2011 in Guadalajara, Mexico, he established the restaurant Lula Bistro which has received several acknowledgements including the Distincion Bohemia (2011) and the acknowledgement Marco Beteta (2012). In addition, Chef Darren Walsh was nominated to the Gourmet Awards (2012, 2013 and 2015) from Travel + Leisure magazine.
